Firstly, install a woodstove. The biggest you can find, at least for 60cm logs, ideally with an oven. The cheap ones come from eastern Europe and are basic but work fine.
Secondly, those beams (and much more) are best dealt with using a sand blaster, that takes off the crud and the rot. Once that is done, do NOT replace any timber bur do at was traditionally done, and double up with new timbers alongside, bolted through the old beans.
I would suggest you buy yourself a proper air compressor and a sand blaster, because that will also give you a paint sprayer, which makes big surfaces much easier to treat or paint.
Go 'professional' and it will make your life so much easier.
"Cottage industry" would be the right term. These abandoned homes are not easy to fix and require a great deal of sweat equity to make them habitable. The mold that you may or have already encountered is another thing that would be worrisome to me. It's quite a juxtaposition. There is a housing crisis but also many abandoned homes and properties. I guess what there really is is a lack of housing that is move-in ready for both Spanish people and people moving to Spain. I have seen numerous properties either abandoned or in disrepair in Portugal, not just in the country but also in high traffic tourist areas and cities. People also have to be very careful with watching and believing the YouTube influencers on moving to Europe and buying a "fixer upper." I can think of one well-known YT couple who give financial advice while living in Portugal who "fixed up" a perfectly good house and made it seem like it was some huge effort.
